is "mini loaves" the right translation for "petits cakes salés", we're not sure, but let's call them like that anyway!
it's the perfect recipe to have an aperitif outside in spring or summer. the white wine brings an uncomparable flavor. and the green olives... just close your eyes and you're in the mediterranean!
for 24-30 mini loaves:
300 g flour
2 tbsp baking powder
3 eggs
1 tbsp fresh cream
40 g butter
40 g olive oil
200 g white wine
170 g grated parmesan cheese
200 g halved green pitted olives
1 tsp dried oregano
a pinch of black pepper
preheat the oven to 180°C (356 F).
melt the butter, leave it to cool.
in a bowl, whisk together the flour, the baking powder, the oregano, the black pepper and the olives.
in another bowl, whisk the eggs, the cream and the butter. add this mixture to the first one and mix.
add the parmesan cheese, and mix gently.
mix together the white wine and the olive oil, and add them to the previous mixture.
pour into mini loaves pans.
bake for about 20 minutes, until a knife comes out clean.
piece of advice:
don't hesitate to bake them a little longer (25 minutes) if you like them crispy on the outside
