banana and white chocolate ice cream

banana and dark chocolate is a famous pairing, but banana and white chocolate is a less well known match. which is a shame, because it's divine!

this ice cream is definitely worth a try. it's as creamy and rich as expected when working with ingredients such as banana and white chocolate.

and it's super easy to make: melt, mix, refrigerate, freeze.

the best way to prepare it is to make the mixture the day before, and let it cool in the fridge overnight. you can then freeze it the next morning and serve the ice cream for lunch or dinner (or as a quick snack in the afternoon!).


for about 1 liter ice cream:


3 big ripe bananas

300 g white chocolate

50 cl (500 g) whole milk

4 cl (40 g) whipping cream

1 tsp glucose syrup (or 1/2 tsp honey, one with a neutral flavor)


melt white chocolate using a bain-marie (double boiler/water bath).

when melted, add milk, cream and glucose syrup (or honey).

whisk until perfectly combined.

place in a blender, add bananas in slices. mix until combined.

place mixture in the fridge for 4-5 hours (a whole night is better).

freeze according to your ice cream-maker's instruction (usually between 20 to 40 minutes).

transfer into a freezer safe container and freeze for at least 3 hours before serving.


piece of advice:

  • we use this kitchenaid ice cream maker, and we're very pleased with it! it is actually an attachment, so you need to have a kitchenaid stand mixer to use it. if you have one, the ice cream maker is really a good investment if you're found of ice creams!
